Lately I'm really getting into these 2" thick, one rib, middle cut prime rib, steaks on the grill.
~2.5 pounds,
dry rub, sear in 12" cast iron pan then ~30 minutes indirect heat and heavy smoke at about 300F on the grill.
pull meat at ~130F internal then tent in foil and let rest at least 10-15 minutes, Thick cut. slice,
melt in mouth.

Yesterday I grilled ribeyes and sea scallops for Mother's Day, but I also made cream cheese, cheddar cheese, bacon wrapped jalepenos. Very good if
