extra milk protein and oatmeal will give you a nice smoothness and a good head. if you want the fine bubbles too, well then you're just screwed

yes, but mead takes a long time to finish and you start with a ton of honey and end up with such a fractional amount. But very yummy indeed!

I've got a root beer and lemon lime on tap too
Just finished up the CDA :D Hit a few snags with my mash ton for some unknown reason, it's usually spot on, but I compensated and hit all my numbers,
just had to sacrifice a fractional gallon final product  c'est la vie. 14 days in
the primary, 7 days in the secondary dry hopping and then kegged and... ready enough to tap!

The CDA is done and just dry hopping... and the amber will be kegged over the weekend Now on the the next batches! I only made just under 4g of the CDA and it's turning out wonderful so I'm going to make another batch of
that next.

My old freezer wth thermal over-ride finally died... so hard to make a good lager in warm areas without temperature control.... but a Amber Ale

yeah, the other option is to make a son-of-fermentation-chiller. You can make it on the cheap. http://home.roadrunner.com/~brewbeer/chiller/chiller.PDF
You just need to feed it ice. If you are doing an ale then one a day is plenty. Get a good R-value foam and it'll hold cold really well. Doing a
lager and you have to change it a few times a day to get ti down to temp but once it's down there once a day usually seems to work. Brew Saturday,
ice, ice, ice, and by Monday morning it's good to go. that's at least for my summer climate of 80 in the cool garage.
