best to let go with both hands. 9 times out of 10 if you let go with one hand the kite will go into a death spin .. which will create a large amount of power and you will have no control of the kite at that point.

Peter Lynn built dead man's handles for the peels. When you release pressure on the handles, the lines released and the kite fell out of the air.

If you decide to add a line, do it from the trailing edge and not the center. This will help the kite to "flag" instead of the aforementioned "death spin".
