First day back from a 2 day kite festival out of town, I wanted to cook myself real food again............Flying large Vipers and Beamers will burn those calories yah know.




yes, this is one long run-on sentence:


My peppercorn encrusted, bacon wrapped, diced bacon stuffed, Jamaican Jerk spiced, salt and brown sugar brined for 1 hour, 1.5" thick, huge boner pork chops on the BBQ grill tonight...heavy applewood and pecan smoked.

It's not so phallic as it may sound. I work for a family owned(in-laws) meat company on the processing floor by morning and delivery driver by day. I have stuffed many a cut in my time, but never a pork chop. Very nice. Though unfortunately we do not make it so far as Seattle.
