Bacon Bacon Bacon Orgy
First day back from a 2 day kite festival out of town, I wanted to cook myself real food again............Flying large Vipers and Beamers will burn
those calories yah know.

My peppercorn encrusted, bacon wrapped, diced bacon stuffed, Jamaican Jerk spiced, salt and brown sugar brined for 1 hour, 1.5" thick, huge boner pork
chops on the BBQ grill tonight...heavy applewood and pecan smoked.

It's not so phallic as it may sound. I work for a family owned(in-laws) meat company on the processing floor by morning and delivery driver by day. I
have stuffed many a cut in my time, but never a pork chop. Very nice. Though unfortunately we do not make it so far as Seattle.
