I'm doing a trial run tonight on making a bacon explosion for the super bowl. Here's where I'm at so far. I'm going to put it on the charcoal grill with indirect heat and apple wood chunks. It consists of a bacon weave, Italian sausage, fried bacon, barbeque rub, and barbeque sauce in the middle and when it's finished as a glaze.

It turned out pretty good. There are several recipes online but you can pretty much put a basket weave of bacon around any of your favorite foods. For the Superbowl, I think I will use a combination of ground beef and sausage with grilled onions and peppers in the middle. Of course this will mean another trial run.

I forgot to mention my side dish. I fried new potatoes in the bacon grease.

Are there still those unaware that saturated fat like you find in bacon is not what causes heart disease? Arteries clog when cholesterol clumps up where it attaches to artery walls inflamed from eating refined grains and sugar. Bacon is not bad as long as it's along with fruits and vegetables in good measure in your diet.

For more info, look into the Paleo way of eating. Basically, its food that our bodies are designed to live on. I don't agree with it 100% but it has a great deal of good sense in it.
