scotts bluff county nebraska has a county fair every year... and every year, at this county fair, is a chili cook off!
Well you know me, i like peppers, and i like hot food... so i figured, awesome! a chili cook off in a place with a HUGE latino population (who usually
like spicy food)... should be awesome... wrong!
at every booth i went to, at least 1 person asked the cookes if it was spicy! and if they said yes, people walked off!?!! What!
The sad part, NONE OF THE CHILIS WERE SPICY!!!
AT ALL!
well i vowed last year to change that... to bring REAL chili to Nebraska, in a big, bold, knock your socks off, burn you a$$ off chili....
i want this obscenely hot... just to spite the weak chilis that infect this cook-off... i really dont care if i win, but i want some
hot-nasty-goodness
so far i know i want at least 5 gal of chili (should be plenty, lmao)
1lb of dried jolokias (about a 1 gal bag)
2' string of dried cayenne peppers i have hanging from last summer
1lb fresh habaneros... just to add to the look
i'd like to use marinated flank steak, and fresh sauteed candied onions & mushrooms... then i'll use my buddy's chili recipe... it actually pretty
simple, but reall tasty
think i'll win?

There is this one hot sauce named dave's total insanity 2 drops is enough to ruin a chilli. it has warnings on the bottle about people with heart or

hmmmm sounds good. but... I agree make two pots with half the kick, that way you can show that not only does your chili kick some serious butt cause
it tastes amazing, but the hot you have in the insaneo version is not covering up your faults as a chili cook. For me I tend to mix in a dark stout
beer (one of our local brewers happens to make a chipotle coffee stout) into the makings of, esp if using a super hearty meat like flank stank or
bison. mmmm.... so freaking awesome. Then kick it up a few amazing heat levels like some aSS-on-fire or the aforementioned Dave's hot sauce.

i actually have 8 plants with the Dorset Naga - officially the world's hottest pepper rated at over 1 million scoville units per fruit. Check the web.

i tried to grow about a dozen jolokias last year myself... but the weather around here wasnt quite right.... i had really big plants, but they never
fruited... so now i have a guy in texas i can buy all the jolokias i want, lol
my fiance isnt even buying into the idea yet... she told me she wasnt sure she knew anyone besides me that could eat my last chili concoction.... and
